Shirohotaru Tofu Shop
The tofu, made with home-grown soybeans, natural bittern and natural water, and hand-fried rapeseed oil, has a rich and very gentle taste.
In soybean cultivation, we do not seek yield, but rather cultivate soybeans in a way that is close to nature, coexisting with grasses, microorganisms, and insects that naturally grow in the fields without the use of pesticides or chemical fertilizers.
Although we started this tofu store as we were led, we hope to play a part in making people, the earth, and the planet healthier.
In addition, in April 2016, we opened our second store, White Hotaru Kitchen, in Hatsuji City Garden, a direct sales area in the town of Karuizawa.
The restaurant offers a healthful menu made with plant-based ingredients, including sugar-free "drinking tofu," enzyme brown rice with creamy soybean milk miso soup, and "mochi mochi brown rice bread" made with home-grown wheat and thick tofu mixed with enzyme brown rice.
