We serve mainly Tuscan cuisine, especially from Tuscany, one of Italy's most famous regions. Tuscan cuisine is characterized by meat and vegetables. We currently purchase our meats (beef, pork, and chicken) from a reliable producer in Akita Prefecture. The meat is raised with great care in terms of fattening methods and feed, and is comparable to that of Italy.
Vegetables are basically provided by local farmers. (Some vegetables are not necessarily locally grown.) These farmers grow vegetables organically and without pesticides as much as possible. They also grow a small amount of Italian vegetables for our restaurant. We also have vegetables that are hard to find in Karuizawa. We highly recommend their fresh and tasty local vegetables.
