We are particular about ingredients with the theme of local production for local consumption. We use seasonal ingredients and make each dish by hand so that you can feel the season. We offer reasonably priced "Shinshu beef," a brand-name beef from Shinshu. We also use 100% Karuizawa-grown buckwheat flour for our handmade soba noodles named "Karuizawa soba. Every morning, our artisans diligently prepare the soba noodles.
